With cutting-edge creativity at play, Executive Chef Arun Sundararaj has taken Modern Indian food a notch above with distinct flavours, new techniques, ingenious presentations, seasonal delights and usage of organic produce and spices. A host of authentic Indian recipes that were lost back in time have also been revived with unconventional methods of food preparations – one of the methods being dehydration of vital ingredients for rich flavourful delicacies.
